Just ordered (some nice quarry tiles) May - Door! The bakehouse needs an internal door to keep it seperate from the house -… Continue reading Road Plan to Sourdough this Summer
Pondering a Zero Waste Bakehouse
Busy getting the bakehouse ready, and have been pondering what a zero waste bakehouse would look like. What do I mean by zero waste? Well as Anne-Marie Bonneau's strap line on zero waste chef summarises neatly - "no packaging, nothing processed, no waste". There are now a number of zero waste restaurants and cafe's springing up challenging the… Continue reading Pondering a Zero Waste Bakehouse
2016 Re-hydrating
The lull after the storm Dec 2016. Nearly Christmas. The lull before the storm. Actually it feels more like the lull after the storm, having just had our second child, and having moved into our new home. So in this lull felt it was high time to press out some words on the lovely WordPress… Continue reading 2016 Re-hydrating
Bakehouse in Construction!
So we're constructing a new house this year up on Darachbeg Croft, Muirshearlich, Banavie. And in our new home, we've decided we're going to re-jig our utility/shower room into a dedicated home micro bakehouse for doughies to ferment in for a bit. ETA? Well we'd love to be in by Christmas, but we also might run… Continue reading Bakehouse in Construction!

It was really fun looking back at all the #realbread antics. A nice way of… Continue reading Blog Optimisation
New Oven Arrives
Our slightly used but pretty spang dangly bread oven arrived today. Its a ROFCO B30 bread oven (electric with stone soles), and arrived from Brook Food down in Somerset, though its actually made by ROFCO over in Belgium. Its a micro-bakery oven, not quite a full bakery deck oven, but a good step forwards on the journey… Continue reading New Oven Arrives
A doughies Christmas roundup
High time we had a little doughies roundup, and seeing as there's only a few days till Christmas, let's make it a Christmas roundup! In no particular order, here's some snippets of news for interested bread-heads :- Bread slicer & bread prover We scored two pieces of new kit for the bakehouse. The first was… Continue reading A doughies Christmas roundup
Rocketeering
Thinking about and now mid way through drawing up new oven plans ready for quotation, and then onwards to building. Our mark 1 oven currently in use on bake days is a characterful but clunky black oven - black ovens are high mass wood fired ovens, with the fire inside the baking chamber. The main… Continue reading Rocketeering
Local Producer Event in Skye
Today me, abs and Verity (the doughies gang) attended "Rural Shops and Local Producers: a Local Supply Chain Event" at the impressive Sabhal Mor Ostaig venue on the Isle of Skye. The event was geared towards local food producers and retailers in Skye and the West Highlands. We rattled out a few sourdoughs last night… Continue reading Local Producer Event in Skye
