Doughies is now a registered food business; Abs had a visit today from the local Environmental Health officer from Highland Council; things look set for a launch at the Lochaber Agricultural Show in August (keep an eye out for us) – doughies is go!
So we better go-bake – bake no 2 tomorrow. Tonight we’ve mixed up two wheat pre-ferments & two leavens (wheat and rye) for some overnight fermenting. We’re planning two batches of 8 loaves tomorrow. Wood store slightly non existent at present so went and chopped dry logs at Henry’s – all set. We’re let you know how it goes.
