Our baking pause is about to end, and we’re hitting play on the sourdough micro bakery from this Thursday (7th May) – time to re-fire those ovens, mix some dough and wield that peel in a strange new world.
Some things have not changed. Still sourdough, organic, local, micro, zero-waste, baked to order from our small croft based micro-bakery. But its not quite business as normal. Our micro bakery business model (like many businesses) needs to adapt. Up to now we have primarily focused on business to business (shops, cafes, campsites) leveraging seasonally on the large tourism highland pull, with a few individual subscriptions on the side picking up from us or cafes. But its looking like no tourists this season. The cafe doors are closed, and the streets lie still. Social distance rules now apply.
Working within the new normal we have a part to play helping re-imagine a local resilient food supply. Local, low carbon, low waste and nutritious food remains essential. So we’re tooling up to support two kindred businesses that are re-imaging the food supply in the wake of the pandemic here in Lochaber.
