Doughies took its first step today to getting a brand.
Cos today we commissioned John Sutherland, from crofteleven to work up a logo for the launch of Doughies [Fort William].
Got me thinking about brands – and how ultimately it’s a mark or signature that you associate with a person, company or business.
In the case of a baker, his bread is his brand – and bakers “sign” their bread with a slash; which serves two purposes:-
a) It controls where and how a lump of dough rises during the bake (we call it oven spring)
b) It helps identify the type of bread and/or who baked it.
I came across this cool illustration whilst at the Long Critchel bakery in Wimborne (well worth a look); which got me thinking about all the ace ways you slash a boule – which led to this illustration on different slash patterns.
